Festival of Chanfaina

On Sunday November 30, we will have on our plates, one of the most traditional and popular Andalusian meals: the Chanfaina.

The municipality of Totalán, located in Axarquia, is preparing to celebrate the Festival of Chanfaina.

For those unfamiliar with the tradition of this peasant, cheap and ancient stew, here you have a short recipe:

“The chanfaina starts in a pan with olive oil where you place sliced potatoes (not too well cooked) are prepared, and when they are ready, remove them.

In the same oil, meat offal or blood sausage is fried. After the dressing is prepared with breadcrumbs, garlic, saffron, pepper, cloves, cumin, oregano, salt and vinegar. Finally, stir over low heat all together in a saucepan.

 

All that, once well fried, spread on a base made with breadcrumbs, salt, vinegar, garlic, table salt, oregano, cloves, cumin and pepper, which is the chanfainilla or dressing and hence the name of a undoubtedly Arabic reminiscence. ”

This dish is easy to prepare, perfect for recovering after the farmers are, still preparing a hard days work in the fields and even today.

In this edition of the Festival Chanfaina you can find handicrafts of the region of Axarquia and the Montes de Málaga, traditional food, numerous tastings of this and other dishes, a craft market, live music to accompany the traditional panda verdiales …

From different areas in the town on Sunday, they will distribute glasses of wine made locally, olive oil, marinated olives and among other things.
